Gray (2003, 2005) made an immediate impact in his first season with the Missouri S&T football program in 2003. In just eight games, he threw for 2,014 yards and 20 touchdowns on 191 completions, earning all-conference honorable mention recognition from the Mid-America Intercollegiate Athletics Association.

Gray returned in 2005 to lead the Miners to their first winning season in two decades, finishing with a 7–4 record. Gray set multiple single-season school records in 2005 by completing 302 of 525 passes for 3,583 yards and 39 touchdowns. His performance earned him Offensive Player of the Year honors in the Independent Football Alliance (IFA) and a spot on the All-IFA first team.

By the end of his career, Gray held program records for career pass completions (493), passing yards (5,597), total yards of offense (5,469 yards), and touchdown passes (59). He also set single-game records for passing yards (499) and passing touchdowns (six).

Gray's ability to command the offense, stretch the field, and consistently find the end zone established him as one of the most prolific quarterbacks in Missouri S&T football history.
